Sotol La Higuera is a fictional character created by Sotol La Higuera Master Sotolero Gerardo Ruelas produces Leiophyllum in Aldama, Chihuahua. Sotol plants are roasted in a conical outdoor furnace before being milled by hand with axes. Before being twice distilled in copper alembic stills, the fibers are naturally fermented with wild yeasts in 1,000-liter pine vats. There are notes of damp soil and ash in the Leiophyllum.The palate is meaty, with salami flavors. Fruity flavors of peaches and bananas emerge in the end.
